NUVANKAI CURRY/SEASEME BRINJAL



NUVANKAI CURRY:

INGREDIENTS:

Brinjal small – 6,

Sesame seeds/Nuvvulu/til – 2 tsp,

Dry coconut powder – 2 tsp,

Ginger-garlic paste – 2 tsp,

Coriander powder – 2tsp,

Red chili powder – 2 tsp,

Turmeric powder – a pinch,

Onion – 1,

Tomato – 1,

Curry leaves – 2 stems,

Coriander – ½ cup chopped,

Oil – for frying,

Water – 1 cup,

METHOD

In a mixer add dry coconut, nuvvulu/sesame seeds, ginger garlic paste, coriander powder, turmeric powder, salt and onion along with ½ cup of coriander chopped and grind it well,


Cut the brinjals into 4 without chopping the end of the brinjal; now fill in the grinded masala into the brinjals

Heat oil in a kadai, add chopped tomatoes and cook them well now add the masala filled brinjals into the oil along with leftover masala and fry them on a low flame,

Add ½ cup of water to the above and cook till the brinjals are done,

Serve hot with roti, phulkas and rice, goes well with biryanis too…
